Chunky Guacamole

Description

This guacamole is creamy, bright, and just chunky enough to feel generous on a chip. Letting the onion, chile, lime, and salt mingle briefly before folding them into the avocado gives you a rounder flavor without losing that fresh, green character.


Ingredients

🥑 Creamy base

  • 3 ripe avocados
  • 1 tbsp / 15 ml fresh lime juice

🌿 Fresh mix-ins

  • ¼ cup / 40 g finely diced white onion
  • 1 small jalapeño (seeded and finely minced)
  • ¼ cup / 8 g chopped cilantro
  • ½ medium Roma tomato / 50 g (seeded and finely diced)
  • ¾ tsp / 4 g kosher salt
  • 1 to 2 tsp / 5 to 10 ml more fresh lime juice, as needed


Instructions

Prep the fresh mix-ins

  1. Finely dice the onion, mince the jalapeño, chop the cilantro, and seed and dice the tomato.
  2. Put the onion, jalapeño, cilantro, tomato, salt, and 1 tbsp / 15 ml lime juice in a medium bowl.
  3. Stir well and let the mixture sit for 5 minutes so the onion softens slightly and the salt starts seasoning everything evenly.

Mash the avocado

  1. Halve the avocados, remove the pits, and scoop the flesh into a small bowl.
  2. Mash with a fork until mostly smooth with some small chunks still left throughout.
  3. Fold the mashed avocado into the seasoned vegetable mixture until combined.

Finish and serve

  1. Taste and add 1 to 2 tsp / 5 to 10 ml more lime juice if you want a brighter finish. Adjust salt if needed.
  2. Let the guacamole rest for 10 minutes if you have time, then give it one gentle stir and transfer it to a serving bowl.
  3. Success looks like a dip that is pale green, creamy, and scoopable, with soft avocado pieces, no watery puddle at the bottom, and a bright finish that doesn’t overpower the avocado.

Notes

  • Mash the avocado in a separate bowl first so you can control the texture more easily before folding in the mix-ins.
  • Seed the tomato well if you want a thicker, chip-friendly guacamole.
  • Use a fork instead of a blender or processor, because guacamole tastes best with a little hand-mashed texture.
  • Taste with a chip, not just a spoon, since the salt and lime read differently once the guacamole is on food.
  • Add extra lime a little at a time, because too much can make the avocado flavor feel pushed into the background.
  • For the freshest color, make it close to serving time whenever you can.
