Homemade Alfredo Sauce

Description

This Alfredo sauce is rich, silky, and glossy, with butter, cream, and Parmesan doing all the heavy lifting. It’s the kind of sauce that clings to pasta instead of pooling underneath it. The key to that smooth finish is gentle heat once the cheese goes in.


Ingredients

  • 1 tbsp / 20 g – unsalted butter
  • 2  garlic cloves, very finely grated or minced
  • 1 ½cups / 360 ml – heavy cream
  • ¼ cup / 60 ml – hot pasta water or whole milk, plus more as needed
  • 1 cup / 90 g – finely grated Parmesan cheese


Instructions

Start the base

  1. Grate the Parmesan very finely and keep it loose, not packed into clumps.

  2. Set a large skillet or sauté pan over low to medium-low heat. Add the butter and let it melt without browning.

  3. Add the garlic and cook for 30 to 60 seconds, just until fragrant and softened.

Build the sauce

  1. Pour in the heavy cream and the 1/4 cup / 60 ml hot pasta water or milk.

  2. Bring the mixture to a gentle steam, not a boil. Whisk often for 2 to 3 minutes, until it looks slightly thicker.

  3. Lower the heat to the smallest flame, or pull the pan off the heat for a moment if you see active bubbling.

  4. Add the Parmesan in 3 additions, whisking smooth between each one. Keep the sauce warm, not boiling, so it stays glossy instead of grainy or separated.

Finish and serve

  1. Return the pan to very low heat only if needed. If the sauce feels too thick, whisk in more hot pasta water or milk, 1 tbsp / 15 ml at a time.

  2. Taste the sauce. Parmesan is naturally salty, so it may already be balanced.

  3. The sauce is ready when it looks shiny, coats the back of a spoon, and falls in a slow ribbon instead of a heavy clump.

  4. Toss immediately with 12 oz / 340 g hot cooked pasta, or spoon over chicken, broccoli, or roasted mushrooms.

Notes

  • Keep the grated cheese cool until you need it; warm cheese starts clumping sooner and melts less neatly.
  • Freshly grated cheese melts more smoothly than pre-shredded, which is why this sauce feels silkier when the shreds are very fine.
  • Aged cheeses are less forgiving than milder melting cheeses, so patience matters more than power here.
  • When reheating, low and slow beats hot and fast every single time if you want the sauce to come back glossy.
  • Warm the serving bowl if you can, because Alfredo thickens quickly the moment it hits a cool surface.
  • Taste for salt only after the cheese is fully blended, since the final salt level can jump fast.
  • The sauce should look a touch looser in the pan than you want on the plate, because it tightens as it stands.
  • Tossing with hot pasta for a few seconds gives you better cling than spooning the sauce over the top at the last second.
