Description

Huevos rancheros combines crisp corn tortillas, warm beans, fried eggs, and a fast ranchero sauce into a breakfast that is straightforward yet very satisfying. It stands out because the salsa stays fresh and easy to spoon over, while the tortillas remain sturdy enough to hold the eggs and toppings without getting soggy.

 

Ingredients

🍅 Ranchero Sauce

  • 1 lb / 450 g Roma tomatoes, halved
  • ½ medium white onion
  • 1 jalapeño
  • 2 garlic cloves
  • 1 tbsp / 15 ml neutral oil
  • ½ tsp / 1 g dried oregano
  • ¾ tsp / 4.5 g kosher salt, plus more to taste
  • ¼ cup / 60 ml water

🫘 Base

  • 1 tbsp / 15 ml neutral oil
  • 15 oz / 425 g refried pinto or black beans
  • ¼ cup / 60 ml water
  • ¼ tsp / 1.5 g kosher salt (if needed)

🍳 Finish

  • 8 corn tortillas
  • 2 tbsp / 30 ml neutral oil, divided
  • 8 eggs
  • 2 oz / 55 g queso fresco, crumbled
  • ¼ cup / 60 ml Mexican crema
  • 1 avocado, sliced
  • ¼ cup / 10 g cilantro leaves
  • 1 lime, cut into wedges


Instructions

Make the Ranchero Sauce

  1. Heat a large skillet over medium-high heat. Add the tomato halves cut-side down, the onion, and the jalapeño. Cook for 6 to 8 minutes, turning as needed, until the tomatoes are blistered and softened and the onion has dark spots.
  2. Add the garlic to the skillet for the last 1 minute, just until fragrant and lightly marked. Transfer the vegetables to a blender.
  3. Add the 1 tbsp / 15 ml oil, oregano, ¾ tsp / 4.5 g salt, and ¼ cup / 60 ml water. Blend until smooth but still pourable.
  4. Return the sauce to the skillet and simmer over medium for 4 to 6 minutes, until slightly thickened and glossy enough to coat a spoon. Taste and add more salt if needed.

Warm the Beans and Tortillas

  1. In a small saucepan, heat the 1 tbsp / 15 ml oil over medium. Add the refried beans and ¼ cup / 60 ml water, then stir until smooth and warmed through, about 3 to 4 minutes.
  2. Taste the beans and add the ¼ tsp / 1.5 g salt only if they need it. Keep them warm over low heat.
  3. (Optional) Upgrade: Stir a spoonful of the warm ranchero sauce into the beans before assembling. That tiny extra step seasons the base more deeply and makes the whole plate taste more connected without changing the basic flow of the recipe.

  4. Wipe out the skillet. Add 1 tbsp / 15 ml oil and warm the tortillas one at a time for 20 to 30 seconds per side, until flexible with a few crisp spots. Stack them on a plate and keep warm.

Cook the Eggs and Assemble

  1. Add the remaining 1 tbsp / 15 ml oil to the skillet over medium heat. Crack in the eggs and cook for 2 to 3 minutes, until the whites are set and the edges look lightly crisp.
  2. Cover the skillet for 30 to 60 seconds if you want the tops of the whites more set. For fully cooked eggs, continue until both the yolks and whites are firm.
  3. Spread a layer of warm beans over each tortilla. Top each one with an egg, then spoon over the warm ranchero sauce.
  4. Finish with queso fresco, crema, avocado, cilantro, and a squeeze of lime. Success looks like a tortilla that still holds its shape, beans that stay creamy, sauce that sits on the egg instead of running thinly across the plate, and eggs cooked exactly the way you want them.

Notes

  • Get every topping ready before the eggs hit the pan, because this plate is best assembled and served right away.
  • Warm the serving plates if you can, which buys you a little extra time before the eggs and beans cool down.
  • Spoon the sauce mostly over the egg and beans instead of all around the tortilla edges, so the base keeps more texture.
  • If you want more set whites without flipping, cover the skillet briefly at the end so the tops finish gently.
  • Crumble the cheese fairly fine, so a small amount seasons the whole plate instead of landing in a few salty bites.
